For Ireland, it's probably the Vanishing Triangle case.
It's about eight women who disappeared without a trace in the mid to late 1990s. The disappearances all occurred in the same area, that's why people think it might be a serial killer/abductor.
No one ever heard or seen the women again.

I think Natalee Holloway has been declared dead, but she was never found.
- Went on a class trip to Aruba to 2005 and didn't return back to the States with the rest of her classmates. She was last seen in a car with some guys she met.

Don Lewis, Carole Baskin's 2nd husband (Tiger King doc), was never found as well.
- Disappeared in '97 as he was about to fly to Costa Rica. Apparently feared for his life when he was around his wife.

There are perhaps countless ones, but one which gets me the most curious is the "Ukrainian flight 752". All for we know it was shot down in a terrorist attempt, but there was one specific person in that flight that the terrorists were aiming for and no one really knows the real story.
