Basically most of my family is leaving soon (on Tuesday) and I have a lot of tomatoes I’d like to use up before then. What are some tomato recipes you guys like?

Never heard of tomato focaccia but it sounds good. I’m planning on making tomato soup in he upcoming few days though, and maybe we can make cucumber tomato salad for lunch one day.
Still leaves me with a decent amount of tomatoes probably but it’s a start

Make salsa and you can store it for weeks or months. Also lasagna and tomato soups are a good idea. Also you can pre-make spaghetti sauces and freeze them

i LOVE tomatoes theyre the best omg you can add them to lots of soups and salads, make shakshuka, strapatsada, a tomato couscous salad, add it to a panini or literally any sandwich, eat them fresh with a bit of salt, the possibilities are endless

I hadn’t actually heard of strapatsada before but I’ll definitely give that one a try
I love shakshuka too, I was thinking of making some and probably will

my mom always makes strapatsada w tomatoes when they start going soft, so easy and yummy <3 eggplant and tomato ragout is also one of my favorites

Never heard of tomato focaccia but it sounds good.

its an Italian type of bread, usually there are some types of herbs as well like rosemary
