if u ever want to try, just be sure the soy milk has room temperature otherwise it wont work well

100ml soy milk (room temperature)
half a teaspoon mustard
a quarter teaspoon salt
220g rapeseed or sunflower oil
half a table spoon citron juice

1. put soy milk, mustard and salt in a blender - stir until smooth
2. with the blender on max, put slowly the oil in it until the mayonnaise is creamy
3. put citron juice into it to finish

u can use other plant based milk too (if its just for the taste), but it wont work that well (because soy has lots of protein in it)

When I was avoiding milk I was okay with vanilla soy milk, but liked it much less than cow milk and couldn’t use it as a direct substitute. You could always try goat milk too, we did learn that it’s much much lower in lactose recently

The expiration date on it says the 10th, currently in my timezone we are only the 7th of March. I drank it thinking no issues… HOLY SH-T… it tasted so foul

And this is why I should stick to milk alternatives (minus the lactose intolerance being a factor too) ​
