I can say that African cuisine is FANTASTIC at using Okra. My mother personally HATES the texture, but we went to an Ethiopian place and Okra was in a majority of their dishes. BUT IT WAS SO GOOD. I recommend Ethiopian food personally, as that is the one I have the most experience with BUT my mother hates Okra and she really enjoyed the dishes as well.

@alo a couple things I make are Nigerian chicken stew, Nigerian beef stew, peanut butter chicken stew (it’s pretty out there but quite good), and an East African thing I like is coconut cardamom mandazi
