I love to make risottos :pepeclap: ones that always turn out good is courgette, vegetable and salmon risottos :uwu:

I really like this vegan nut cake



Ingredients
- 300 g wheat flour
- 120 g ground hazelnuts or other ground nuts
- 150 g sugar
- 2 tsp baking powder
- 1 tsp baking soda or 2 tsp more baking powder
- ½ tsp salt
- 320 ml plant milk e.g. soy, almond, cashew, or Oat milk
- 80 ml oil e.g. rapeseed oil or sunflower oil
- 1 teaspoon vanilla extract
- 1 tablespoon apple cider vinegar or lemon juice

Glaze + Topping:
- 100 g dark chocolate
- 1 tsp oil
- chopped nuts


Instructions

1. Preheat the oven to 180°C top/bottom heat. Lightly grease a 25cm loaf tin and then line it with baking paper so that it overhangs the sides
2. In a large bowl, mix together the flour, ground hazelnuts, baking powder, baking soda, sugar and salt and set aside.
3. Mix plant milk, oil, vanilla extract and apple cider vinegar in a measuring cup. Then pour into the flour mixture and stir with a whisk, wooden spoon or spatula until the ingredients are just combined. (Please do not stir the dough for too long, otherwise the cake will not rise well).
4. Pour the dough into the prepared loaf pan and smooth it out.
5. Bake the cake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
6. Then let the cake cool in the tin for 10-15 minutes. Then use the excess baking paper to lift it out of the tin, place it on a cooling rack and let it cool completely.
7. Add glaze + topping (you can melt the chocolate in the microwave or in a water bath on the stove)


you can also make this glutenfree, just use glutenfree flour for it. I always mix glutenfree flour with bookweed flour for example, because the bookweed taste goes well with hazelnut.
