I say both. Happy holidays until Thanksgiving, and then Merry Christmas after.

I use both, but Merry Christmas more. But I don’t usually say it to someone who isn’t in my family or a friend of mine, so I do also know they celebrate only Christmas. The exception is my grandparents, who don’t celebrate Christmas, so to them I only say happy new year.

I use them pretty interchangeably, but try to default to "happy holidays" with people I don't know. To me, Christmas is a commercial holiday with an excuse to buy people you love things, about on par with Valentine's Day, but I know some people view it more as a religious holiday, and it's a sensitive topic.

I feel like Christmas ends up being a bigger deal to my immediate family (parents, siblings, and myself, all atheist) than to my grandma (basically the only really religious person in my family). There are other things to consider though in regards to culture, distance physically, and how we grew up at play though. Like Christmas in Russia is basically only for religious Christian’s because New Years, which comes before, is the more inclusive commercial decorate trees and get gifts event holiday. So it definitely varies by culture as to how big or not big of a deal and how religious or not religious it is.
