Thats because bread crumbles and molds faster than tortillas. NASA purchased a bunch of tortillas from Taco Bell to take on their space missions. Originally, an astronaut by the name of Rodolfo Neri Vela brought tortillas on a mission in 1985, and NASA found they were a better alternative to bread so it just kinda stuck. NASA later partnered with companies like Taco Bell to improve tortilla technology for extended shelf life. Taco Bell created a version of its tortillas that can last up to a year, making them perfect for long space missions.​
