Living in India means you have access to so many different cuisines that it is difficult to choose a favorite. Food I find yummy here:
Nepalese Aloo Dum

Chicken Curry

Pani Puri

Also I love Momos but I don't think it counts as Indian food lol

Yes Chicken 65 is great too, my fav snack alongside alcohol
Here though, it differs from state to state. Like in eastern states, it comes with a little spices and stuff, in Tamil Nadu, it was dry and crispy. I loved both versions lol.

Oh it's bamboo shoot- the stem basically lol. Lots of tribes in North East India and they all have their own way of cooking, it's great Especially in the actual rural villages, they know their shit
