With this lockdown I think all day about 'when is my next meal? what is my next meal? what else should I cook/bake?'

I like cooking in general, I like trying new recipes at home and I don't eat fastfood in general, but these days I'm really out of ideas, I try to have variety in my diet, but am I the only one thinking so much about meal prep ideas? :lisalaugh:

Since I'm spending time at home, I've been trying out dishes that take a long time to cook. Not long prep times but long cooking times.

An easy one is oven roasted vegetables. Cut up broccoli or cauliflower crowns or brussel sprouts. Toss with lots of black pepper, garlic powder, onion powder, salt and oil. Place a single layer of veggies in each baking pan and then cook in a 350 degree F oven for 45 minutes (brussel sprouts will take closer to 60 minutes).

There are also meat roasts that will take 1.5 -- 2 hours in a 350 degree F oven.

I have been back to my parent house around week now so I have been planning lot more variety to meals than before. Me and my mom pretty much do food for whole family so there is lot of mouths to feed. I did lasagna couple days ago and I'm thinking of making some fried noodles with curry sauce today.

Here's a nice article on how people are cooking nowadays.

Brian Gilmore posted a simple recipe for In-N-Out burgers that I'm tempted to try as soon as I can get some mayonnaise.

damn I actually did a similar burger at home a month ago, but I made crispy chicken instead of beef
I plan to do it again these days, but I need to get groceries
