Tbh, I haven't been biggest fan either. There is some content that is ok though. My favorite Star Wars experience still is the tabletop rpg campaign that I played as it was more of the neutral characters and not directly about main conflicts- and you got to explore the world on your own. The world of Star Wars is vast and has lot of potential, even though i'm not biggest fan of the general storytelling that goes on.

The story is so complicated that I always get lost. And it just doesn’t just flow as nice like anime and manga storylines/world building in my opinion

It's sometimes like that with western franchises. I feel like I'm still lacking clear bigger picture in Star Wars and all I know is scattered events.
