I have zero talent for music, but if I had I´d love to play the piano. It is so relaxing.
When I was a kid, I was fascinated by harp.
I think guitar is a wonderful instrument, but less interesting to play.

Piano - The vast amounts of music I could play/create. Such a great instrument.

Guitar - mostly to jam.

Saxophone - one of the nicest sounding instruments there are!

Drum - to piss of the neighbours. Oh, and to remix my fave songs with my own drum covers.

I think it depends on what type of music you are playing on the guitar. Strumming a few chords might not be very interesting but if you approach any musical instrument with a casual player attitude they all would be boring after a while. Guitar is an extremely difficult instrument to master.
All that said, I'd love to be able to play the violin but unfortunately big, clumsy fingers and the fretless, tiny fingerboard of a violin don't work together well.

i already play the piano and sax (alto and tenor), but I'd like to learn guzheng or percussion
guzheng since it sounds cool
percussion to get that limb isolation. also, the marimbas look so so fun to play
