It looks like it varies, some prisons are email only, others let other communication programs, other allow games as well, some offer Khan Academy for juveniles, and I'm sure there's more. But I don't see unmonitored access being a thing anywhere for obvious reasons. That includes mail I would assume, even if not all mail is read I doubt they go "This person is getting a suspicious amount of mail and we're questioning it? I guess I misread the op a bit, I thought they were telling the prison staff that they get lots of mail because of lots of family but it just says people not prison staff, so maybe the its not staff and they don't open them out of suspicion. But opening letters of all kinds outside a few types seem to be the norms in prisons. Some places don't even allow the prisoners to get the physical letters.
