The cheese too has cumin, chili powder. Typical Tex Mex seasoning. You can use your own version. It’s sooooooo good toss in jalapeños inside the mix too if you want.
I feel like the kick gets muted so I prefer my jalapeños on the side or on top.

Also, it's pretty hard to mess up mac n cheese in my eyes, but I usually eat it plain cause I'm lazy
