It’s a tragic story. I was preparing the sauce/marinade for tomorrows dinner. Mostly because I wanted to know how much of the orange juice I had left to drink but it turned out good that I started because it was a flop. I followed the recipe using the ingredients I had and it was not even remotely close to what they had. It was supposed to be purée, whereas I had floating orange paste in juice. I looked into it and realized the paste I was using (which was labeled achiote paste) was not at all like the achiote paste the recipe needed. Not even close. Mine was pig lard colored with annatto. The real one is ground annatto seeds with spices and sometimes water or citrus juices or something else to make it a paste. And ofc, conveniently, no place that I googled near me listed achiote paste as something they had. So I had to resort to Amazon and hope it comes soon enough because I have banana leaves in the fridge and now a citrus juice, garlic, and other spices mix in the fridge to use with the paste
Gotta love naming conventions right?
