Specifically the type where you get drunk. Hope that’s enough explanation

Back in the ye old Colonial days, bars would have counters (similar to now). But oftentimes, they would also have bars like in a cage. The bartender would be behind those bars when serving drinks. This was largely for security. Alcohol was too expensive to lose to theft, drunk people can be unpredictable (and violent), and oftentimes they’d be storing money. Sometimes they’d even store weapons (in really rowdy places. Again, drunk people lack inhibition). It also helped in other aspects, like hygiene and efficiency. There were many bars without the full cage setup though, such as ones with just counters. It definitely varied based on era and location.
