Unfortunately for me, yes
My neck easily gets sore and sometimes I have to avoid eating too much
As I am someone who practices vocal, it affects me a lot
Yet I tend to drink other things like tea help reduce it

No, I've only experienced "brain or throat freezes"-- where either my brain or throat felt extremely cold for about a minute, depending on how fast or the amount of the ice creams, etc., were consumed.
But, not throat stiffness.
