Days 2 and 3 were a weekend, so I guess shops weren’t open as much??? That could be a reason anyway why they were so low but rose again today.

This. A lot of stores don't do stock takes/sale counts over the Weekend.
The jump on Day 4 would most likely include some weekend sales too.
