For American Thanksgiving, I have a ton of fam that'll be in town so we're doing a thanksgiving feast.

I don't cook meat :) and I'm not changing that. I usually make a pasta dish or roast some veggies if I'm not baking something like a dessert.
I'm not cooking Indian food, we eat that on the daily. They would kill me if I brought binda nu shaak or pulao.

Give me ideas from other cuisines. :)​

There's a potato salad that from what I know is traditionally eaten on New Years (so not Thansgiving, but a holiday in the vicinity). It's often made with some meat, like ham, but is also often made without, so omitting it is no issue. I prefer it to a typical American potato salad tbh. Common main ingredients for ours include potatoes (ofc), eggs, pickles, carrots, peas, and mayo. This recipe is very close to what we make except we don't add the cucumbers (but do add the pickles), onions, or sugar. It should be started a fair time before dinner so the cooked veggies have time to cool, but it's not complicated to make. Just cook some stuff and dice it all.

I already cooked it myself. if u dont have some veggies you can easily use different ones in my opinion.
