I used to get wrapped up a lot in things like that too, but I've been trying to be more mindful lately of, like, well, how I feel about this person actually doesn't have a ton to do with them, but more to do with me and where I'm at and what I'm looking for. So if they don't match back or the conversation fizzles out, like it's not actually a commentary on me.

I've been on three dates with this person and I'm not feeling it, so I know I should say something, but ugh.

If you are not feeling it you should for sure not go on any more dates. Three is already kind of a lot, but that also depends how long the previous ones were in length. Just be open to the person, just let them know you don't feel that there is a connection. Maybe also mention the things you both differ in and what you do look for in someone. I know I'd appreciate that more than simply being ghosted or blocked unless I did something seriously bad where it's deserved. I feel a lot of people lately lack emotions and are easily to rather block and ghost someone, instead of being an adult and telling how it is. If then a person freaks out or gets mad = block.

That is just me tho. I have not been on a date in aeons, and only ever been with two women.
