This is because green peppers cost 40% less to produce. Customers will think that they are not getting as good of a deal if they see a cheaper pepper in with red, yellow, or orange varieties.​

Edit: nvm I mixed up green and orange. So I guess that reasoning makes sense

Edit 2: actually I was right. The packs have a red, yellow, and green im good at this

Green bell peppers are unripe bell peppers. Because they can be picked earlier, they don’t take as much time and therefore don’t require as much resources and care Red, yellow, and orange on the other hand need more time to ripen
