You all have probably never eaten it, even though it is so simple... In fact... I have never heard of not Estonians eating it! It's young potatoes with cucumber sauce!
You HAVE to use young potatoes for this, because young potatoes have very thin skin, so they don't need to be peeled to be eaten! You boil the potatoes with a bit of salt and that is it for that!
For cucumber salad, you cut the cucumbers into small cube-shaped pieces. You then add so much sour cream that the cucumber is positively swimming in it! To season it you add salt and lots of dill!
And that is how you eat it! Take a good bunch of poatoes, add the sauce on top and eat it! Add nothing more to it and it is the best thing ever!
If I could I would eat it a lot, but sadly it is only available when there are young potatoes around... So for like half a month in the beginning july when the early potatoes are starting to get ready and in late august when the normal potatoes are getting ready...
