And I’m obsessed so all of you will hear about it It’s eggs en cocotte. I got it from a cookbook, not certain the “authenticity” because I saw a recipe in the book that was somewhat different from the version of the recipe I make, but it tastes delicious so I don’t really care. It’s essentially eggs on a bed of boiling cream in a ramekin topped with salt, pepper, and butter then baked in the oven. I topped mine with scallion too
