to everyone saying piano I present a level up: accordian or organ
why limit yourself to just one keyboard when you can have multiple or even more buttons to mash
I'd probably say something basic like drum set or synths then something esoteric like suona (annoyingly loud), pen tapping (it looks cool), aslatua (been seeing a lot of that on my feed) or that marble machine (it's so ridiculous I love it)
or maybe even oddly specific vocal stuff, like throat singing/overtune singing seem super cool too

2. A digital sampling platform like Native Instruments Kontakt. You can play virtually every instrument ever created with a keyboard when there's a software version.

That being said, it's not 'Guitar Hero'. You need to learn making those sounds.
