I just learned that British “Chinese” food has curry sauce :wimwim:
As I'm familiar with Chinese Curry in my country, I think it's cross pollinated from Indian curry/powder which came/originated from India(South Asian country) ETA so probably immigrants from SEA or just learning to cook Indian curry and adapting recipe(?) end edit
I'm unsure about Japanese/Indo Chinese curry(if any).

there's lots of Chinese food that isn't truly authentic chinese food but rather a mix from that country and chinese food
Are you saying my country's Chinese food isn't authentic?(after hundreds of years of cross pollination/evolution) also malatang has been recently(?) imported/popularized here and elsewhere outside China after many years of not being found/unseen/under-utilised.
It's a journey/process, not a ending point.

it's not the Chineseness of the food but the amount of food we consumed along the way!!! lol
When I was younger(probably up till my teens or later), I preferred western/other cuisines to chinese food. Especially fast food or western bfast/corn flakes, or roti pratha.
It wasn't until I was getting my own lunch after school that I started learning to appreciate chinese dishes (but still meatballs n veg with rice tho) later on I appreciate Kwang tung Chao(cantonese wet hor fun) or hokkien noodles or even fried rice/koey teow-i could do a mean zhao fan/hor fun in my teens/twenties(but only if I didn't hv to buy the ingredients myself-kitchen/fridge had it or I would eat out/parents work so after school/weekends I'd fend for myself if I didn't go out)
Even now budget/convenience affect my eating chinese food for my meals.
Otherwise I'd eat more fried noodles every day/rice dishes.

are you normally a trier of new foods (not just chinese)?
Not at all, frex I don't eat rubbery shellfish or seafood: clams n such, squid or octopus cos of the texture(except fried squid sometimes if crunchy fried). I did try eel when younger but that's now popular as a Japanese food if somewhat ex. I tried Greek food when I stayed with my uncle in europe/Germany but mostly ate familiar food (didn't like Greek restaurant food/alcohol but I had no choice unless i stayed home PLUS I dint know then i wouldn't like it)

Even local food I avoid if I know/believe I won't like it. Frex recently at 2 lunches organized by fam(but w/non family guests), I ate mostly wat I liked-nowadays food ordered is not as overmuch-quantity as I rmbr previously when younger(or my appetite isn't as little as before, I used to stuff myself more previously like 20/30 yrs ago but maybe I ate less then even so. 1 incident ard 25 yrs or so ago taught me this lesson: during LNY eve, my elder brother, uncle n I went visiting Unk's friend's family home ard a few hrs before LNY Eve dinner time. My unk missed the time window of leaving before the friend's family went out for LNY eve dinner so we got dragged along. Being typical Chinese my uncle went with his friend becos he couldn't make excuses(I might misrmbr it being LNY Eve dinner, now I think abt it)

long story short, my brother n I were total pigs at dinner n my unk berated us both becos we made his friend's little girl daughter cry from us being inconsiderate n pigging out on the scraps of fish usually leftover at the end of dinner. He told us we were "barbarians" or such to deprive the little girl/make pigs of ourselves. Funnily I don't rmbr my unk telling us off later on or bringing it up again. Yrs later after my uncle passed, his younger son was at another lunch with guests, n I brought up the story. His son kinda blamed his dad n not so much us bros, probably cos we were uncivilised/untaught/unteachable/ignorant of Chinese cultural norms.thinking bk I blame the oneupmanship of traditional chinese patriarchal norms. My unknown did say he shd hv/wished he had made known to us he was gonna treat us to Kenny Roger's dinner BEFORE the whole incident. But he just didn't expect US to be so greedy.

lesson learned, I now think during meals when im being treated(unless it's implied I can pig out, or the food is too delicious) n just tell myself ill go hv more McDonalds later or other food at home or out after tat. I think a few mths ago i did tat at the first lunch mentioned above, the 2nd lunch was over ordered(a set for a big group plus Ala carte) n I even took away food for next days lunch/dinner.some items I just didn't try/want.
