What are your best recipes that use a lot of vegetables? (1 Viewer)

Bonus points if it includes tomatoes too (yes I know they are theoretically a fruit)

Or bell peppers. I just have so many vegetables that need to be used up and idk what to do with them.​

I make mainly chinese dishes so with veggies - stir fry you can basically throw most of the veggies together (except tomatoes they don't really do well in a stir fry lol)

But also, shakshuka. It doesn’t use that many veggies per day, but does use peppers and tomatoes. And it’s yummy

@Chiara the enchiladas sound good, I am not a fan of beans so I will pass on the other one. If the enchiladas have beans, I’m sure it’s easier to substitute.

great! I asked my mom, and she'll send the recipe tomorrow bc it's kind of an ungodly hour for her to be doing tasks lol (she's old and it's 9 pm here)
