7 Days To Die.
I still play this open world game regularly offline and online, since I bought it in a Steam sale in 2018. The game is in Early Access since 2013, so it's not finished yet, but it is very playable with much content: A random map generator. A bunch of good and partly big mods, coming from an active community. And the gameplay is rather complex regarding items, crafting, building. The game plays like a mixture of Dead Island and Minecraft.
There are Steam sales where you can get it for about 10 $.
But ... even the recommended system requirements are rather 'optimistic'. The game starts and works, but you'll have not much fun atm. It might get more optimized in the future, but generally 7D2D profits from more RAM, VRAM, and a fast multicore CPU - while you don't need a very fast graphics card. I've played this game with lower details on a Core i5, with 16 GB RAM and a GTX 770 (2 GB VRAM) - it worked. I play it now with high details on a Core i7, 32 GB RAM, with a GTX 970 (4 GB VRAM) - it works perfectly. You don't need a Ryzen and a RTX for this game, but you also shouldn't have a Potato PC.
