Only sweet pastry or savory pastry too? I'm not a big fan of (savory) pastry but there's this Turkish pastry called "su borek" that I die for. It's literally just pastry that's filled with cheese or mince meat. Su means water and that's because you add water (or milk) on the pastry layers before filling it up and that just makes it reaaaaally soft. It's amazing.

If you mean sweet then I like custard tarts (literally the only thing coming to mind right now actually)

i love eclairs too, but i prefer to make them w mascarpone & whipped cream filling, its so good and not too sweet
i also like danishes with cherries or strawberries
