Because cooked pineapple tastes different to uncooked, in a good way. The texture is also different, again in a good way.

Yeah cooked pineapple takes most of that harsh sweetness from the juice away, so it’s more subtle.
I can’t imagine eating normal pineapple on a pizza, that’s just wrong.
