Kichdi

my comfort food. Highly rec. It's pretty easy to make.
Also, Vegetarian and vegan friendly.
It's really basic and you can add stuff to it if you dont want the basic version.
The basic version it
2 parts rice (you can use any kind, i use short. Long grain works too if you run out of short grain)
1 part yellow lentils
About a teaspoon of tumeric
And enough salt to season (it took me a while to figure out how much id need for the amount of rice i made but i usually made min pretty bland and just added more in after)
If you want it like porridge, add in a little more water
I stick it in my instant pot for about 15 minutes.
The basic version is kinda boring on it's own. You can have it with yogurt or a spicy chutney, or anything really.
Basic Version with some love
For more flavor you can throw in some chilis, garlic, i love adding tomato in mine.
Left over Basic Version went to a party
Or if you have left over of the basic version you can fry it with mustard seeds, garlic, chilis, onions, chili powder. This is second favorite version.
Starting the party early version
There's also a version you can make frying the rice in spices (cumin seeds, cumin powder, mustard seeds, black peppercorns, cinnamon stick, dried chilis, chili powder, bay leaf (optional but i like it) and cloves (also option because i hate it and never add it to mine) and veggies (whatever you like) before you add water and cooking it.
The versions are endless. You don't have to stick with certain spices if you don't like them.
