I’m definitely neither of these but I like some vegetarian stuff so I’ll share those
The one I like best but almost never have is tomato soup. It’s not vegan, but it is vegetarian. The difficulty here is that the grocery store tomatoes really suck where I live, so I only make it in summer with homegrown tomatoes. Idk the status of tomatoes where you are though, maybe you guys are blessed to have tasty tomatoes year round
Another tomato option is eggs with tomatoes and feta and that stuff. Cook some onion, add tomatoes, add eggs, scramble, cook a bit and add seasoning and feta and stuff. Tasty

And easily modifiable
This next one is also not vegan, but vegetarian, and I’m sure you’ve heard of it, but I’ve started to love it way more with a few hints that chefs hate!

Anyways it’s Mac and cheese. I know, an insanely obscure dish that no one has tried. But one thing that usually not added here that I love in it is dry mustard powder. And this is coming from a mustard anti. But I really think a pinch just adds something special that it lacks without. I also like to include a couple cheese vs just one (depends on what’s available). Oftentimes i add cheddar and either mozzarella or Parmesan.
There’s also a potato salad I like called Olivye. It’s often made with chicken or ham, but that’s really optional imo. I love it without any meat. And it’s not too difficult to make, and easy to prep ahead of time.
Japchae can be made without meat but I think certain ingredients could be hard to find (like Korean glass noodles).
I’m a fan of Korean carrot. It’s more a side dish but it’s a good one at least
also do you by chance like mushrooms? I think they’re abominations but if you do like them they can add some umami type flavor to dishes that meat often adds. They don’t have the same nutrients, so in that regard things would have to be figured out, but as far as flavor they could be an option.
