Most anime are adapted from their source material aka manga. Mangaka means the author basically, one who wrote/drew the manga
So the manga or "comic" is the canon stuff, then a studio picks up the right to an anime adaptation of the same. However sometimes if the manga is still ongoing, anime runs into the risk of outpacing the manga aka having no canon stuff to adapt.

So sometimes, they add in meaningless filler to kill time while more manga chapters get released. And in some cases, they just go ahead with their own story continuation which is what happened with OG Fruits Basket. Apparently mangaka wasn't a fan so in the remake they went full canon.

Oh waaaaaaaait now that you have mentioned it I have also seen Death Note I actually enjoyed that so much that I watched it twice lol.
Also I tried watching AOT because I saw everyone mention it but found it super boring so never went past episode 1. I didn't even understand the storyline tbh
