For Korean dishes I enjoy japchae, bibimbap, and rice cake soup. The problem with these dishes is you’ll likely need to find the ingredients at a special Asian store, but if you have some in the area I would recommend all 3. For Slavic food I would recommend sirniki, which require a slavic store most likely, and borscht, which is a beet soup. I also enjoy carnitas, Puchero de tres carnes, and horchata for Mexican food/drinks. And lastly, I’m not certain how authentic it is but I know a recipe for an African peanut butter chicken spinach soup which is pretty good. If you want me to explain more what exactly these dishes are just ask me and I can elaborate

Pupusas (and tamales as well!) are definitely something I'd recommend. The former is from El Salvador and is basically like a corn flatbread or pancake and can be filled with just about anything (like cheese, pork, beef, or squash, my personal favorite), and the latter is a Mesoamerican dish (singular form tamal) made of masa (nixtamalized corn), steamed in a corn husk or banana leaf, and, just like the pupusa, can be filled with just about anything.

And for dessert try Nanimo bars if you like sweet things

For Indian food: Biryani, samosas, korma, chicken tikka masala
For Mexican food: Chilaquiles, menudo, elote, huevos rancheros
