So I decided to try to make stir fry today …

So I suck at cooking

But I have been trying to cook err ... to survive :runaway: look if you make enough food for 6 people but no one else eats it, you don't have to cook for a long time if you're bad at cooking and so take a longer time to do basic things rip I had an egg fiasco

anyways I love food so that's why this sucks so much BUT THIS IS A POSITIVE THREAD LIKE I PROMISED

I'm not sure exactly what I can eat without almost vomiting or instense pain ... and also ready made meals sometimes I can't finish at once but then I get hungry after the pain goes away and I can't take 6 hours for a freaking soup .. so now I can make a bunch and eat a little bit many times a day instead of having to eat a little because of my stomach and being hungry throughout bc it's not enough and etc ...

so yes cooking to survive

and cuz i'm a cheapskate

and BECAUSE I LOVE FOOD :runaway:

so anyways

I got these Trader Joes No-Boil Noodles (Trader Joes is another obsession for another thread)
1711167567739.png

oi they're not "noodles" really in the asian sense as in they're made in italy so they're - pasta

supposed to be egg noodles but a lot of "egg noodles" recipes I found when I looked up weren't noodles? or not in the way I thought of them, like they were western dishes ...
.
vikki you should make a thread omg this is interesting so the noodle part of this russian dish inspired by french cuisine came from china ...

but anyways I decided to use them up for stir fry and they were in the fridge too taking up space - more in trader joes thread ig :runaway:

and I also used
- ginger
- coconut milk
- soy sauce
- carrots
- scallions
- tofu
- err ... canola oil?
- pam non-stick cooking spray?

I thought carrots would be good for stir fry so I bought that solely to use for stir fry

scallions cuz I had bought them for use in a recipe, but couldn't get bean sprouts for the recipe yet bc hard to find and had to use up (got them "green onions" from Trader Joes)

I think tofu might be a safe food since I can't eat most proteins so I used it, and had bought it before. I had bought tofu (not my first time with tofu either, for another thread)

and coconut milk! also thought it might be safe and it is healthy! I got it on sale too! (cuz I'm a cheapskate) had not bought to cook, but to drink but yk

I just wanted to put it and since coconut milk is used in a lot of southeast asian and south asian cuisine it wouldn't be too out of place

ginger I had gotten bc of courrrrsee
:runaway:

so bc I can't cook I looked stuff up

I looked here first:
Easy Tofu Stir-Fry - How To Stir Fry Tofu | The Kitchn

I cut the tofu, pressed it (with a bunch of my school stuff rip), then stir fried it

I think I messed up the second batch (all the cut pieces wouldn't fit in at once in single layer to stir fry) bc I put water in ... they weren't as done but it's ok ig, I won't do that next time tho, I'll add some more oil:idkwhattonamethis:

also looked here
How to Stir-Fry: A Step-by-Step Guide : Recipes and Cooking : Food Network | Food Network

so I cut the carrots and scallions

I started with the oil and heated it, put it two ginger cubes left it a bit while stirring a bit.
then carrots, but not all at once, and was stirring for a bit.
then scallions, but not all at once, and was stirring for a bit.:takingnotes:
then I turned off the heat and moved it bc the noodles said "cook in sauce for 7 minutes" or smth like that ... :pepelook:

I moved the vegetables to a collander

And for the pan (I don't have a wok here rip, in California yes) put some soy sauce in, then a cup of coconut milk, heated it up a little. Put noodles in a bit at a time and kept adjusting temp. after the noodles put in the vegetables. after a bit I poured the tofu in and mixed for a while. after it seemed "done" I turned off heat and just stirred:runaway:

IMG_3464.jpeg

Err it smells and tastes better than it looks in my defense

but it was good! and I'm proud of myself for making it!:magikarp:

and it was fun! tho I took a lot longer than I should but hey it's friday and now I have some food I know is healthy and balanced and I can eat different sized portions from at home since I won't be able to go back to California for a while it seems

thoughts -

scallions - so gooood, first time I cooked with them, though I'm sure I've eaten them before, great with stir fry or coconut milk or both or maybe I just like their taste but it's been a while:llama_squish:

I should've put more scallions and carrots in relation to the amount of tofu and noodles, I put the amount I did because I thought more would be too much, but maybe I could've used the whole pack for both

- it was milder than I expected, but then again literally what did I put? maybe I should've used more ginger and/or soy sauce (soy sauce I hope it's not bad for my stomach bc I love soy sauce omg) or spices that should be "safe" like turmeric cilantro basil clove

if tofu is safe soy sauce should be safe I feel

the coconut milk being creamy really worked well!:llama_squish:

so it tasted good! did it make my stomach hurt - err yes, but not that much compared to other stuff so a win ig I think everything will hurt

err. idk what I'm doing with this thread

Sounds good, but what do you mean when you say ginger cubes? 2 squares of fresh ginger sounds very concentrated, does ginger cubes mean something else? I’m also surprised you haven’t used scallions before in cooking, they’re so prevelant in Asian dishes it seems :haylul: Though that may be more east/southeast Asia, I’m not sure. I actually have some growing because of the fact that a lot of Asian dishes use them, it makes it easier than buying a whole pack from the store when I may not use all of them.

Oh it’s because I’m new to cooking not because they’re not prevalent

glad it tasted good, thats what matters. for me it still looks undercooked and I would have fried it more (so the tofu is more brown)
Yes the second batch of tofu is undercooked since I added more water instead of oil :cri:

edit: I cooked the tofu separately and first then put it in the fridge
