So google is celebrating pani puri for some reason. On the search homepage, they have a cute little game centered around Pani Puri.

If you don't know, pani puri is a South Asian dish and name of the dish can vary from region to region but the concept is the same.
You have a fried hollow round shell that you fill with ingredients (which are also different depending on the region).

The way I grew up eating it, you fill it with spicy potato and chickpea filling then top it off with cold spicy mint water.
'Pani' means water. 'Puri' refers to the round shell.
Thus you get pani puri.
My second favorite way is filling it with a hot chickpea gravy filling and topping it with raw red onions. It's soooo good.

Have you guys ever had this? If you're south asian but don't call it pani puri, what do you call it and what fillings do you use?

bengalis call it phuchka, with the filling including tamarind pulp and spicy potatoes.

though where i live, in the north, it's called gol gappa (and the filling is mint water with spicy potatoes). the puri can also be of two types, either made of whole wheat flour or of semolina!

I've heard of gol gappa usually if I order it at restaurant (which doesnt beat my grandma's water recipe 100% biased).

I opened google to actually look at south asian stuff (specifically india bhutan friendship) yet I didn't notice it

I guess it's called what @alo said but I had no clue

sometimes I have it like as a snack with yogurt and spices and sev bhaja and stuff
