Finally I can announce that I figured out

Special shoutout to @VillageIdiot for recommeding 4k Video Downloader, that was most helpful as it let me bypass all those limitations the online sites had with file sizes.

So now I just download the video I want with that tool, cut the part out I need and and can use https://ezgif.com/

I hope to create more and better GIFs in the future
