at first, I was like WHAAAAAAAAAAAAAATTTTTTTTTTT but then I rtetmembered the Irish eat sauerkraut a lot, so I'm guessing it's actually from Ireland?

It is believed to have originated over 2,000 years ago during the construction of the Great Wall of China, where it was used as a method of preserving cabbage by fermenting it in rice wine. The recipe was later introduced to Europe by the Mongols, where it evolved into the sauerkraut we know today.
