Italian envelope cookies from my understanding are circular cookies, filled with jam, and 2 sides are pinched together, forming an envelope shape. Alfojores are South American/Latin American cookies that are very soft and have dulce de leche sandwiched between 2 cookies. They’re the ones that kind of look sort of snowflakes at the bottom.
