the question is then: is the killing of animals unethical in any situation? because it would seem you are making the argument that taxidermy is somehow wrong or unethical per se
one must start with the most simple of questions - is the killing of animals unethical in and of itself - obviously if the answer is a straightforward no then question over - if the answer is yes then the question is why is merely the killing of animals wrong?
if the answer it depends then the question is:
why is the killing of animals wrong in one situation (ie. taxidermy more unethical) than the killing of animal for another reason
because one cannot separate the killing of animal for one reason vs the killing of an animal for another and someone state that they are different because whilst you might believe say killing of animals for food is ethical but someone then the killing of animals for any other reason - (let's lump hunting and taxidermy under the umbrella of enjoyment) is somehow then unethical.
i didn't say killing animals for taxidermy is more unethical. what i'm trying to say is it varies case by case, there is nuance.

basic survival need, while taxidermy, especially when not involving already deceased animals, is more about

recreational desires.
but many people do differentiate based on the perceived necessity and the suffering involved. like in an ethical sense, the concept of "necessary harm" versus "unnecessary harm"
killing an animal for food might be seen as a necessary harm, whereas killing for sport or display (as in taxidermy) might be viewed as unnecessary.
you can lump hunting, diet, and taxidermy under the umbrella of "enjoyment" but not all forms of these are motivated by enjoyment as some are driven by needs.
it's also worth questioning whether all forms of enjoyment that cause harm are equally justifiable or ethical.
