I think you can use mashed bananas, buttermilk, and/or tofu as a substitute for eggs when baking.

I was skeptical about the bananas, but the sugar and vanilla and other flavors cancel out the strong taste of the banana apparently.

I've found that if you eat bananas while they are still green that the slime is minimal.
